This easy vegan meal prep is mac and cheese without cashews. This nut free, dairy free meal prep can be made gluten free! The sauce is potato and carrot base. I add smokey chipotle peppers in adobo sauce to make these spicy but that’s optional. This can easily be made low fat vegan but I enjoy it best with a little oil. With this I made seitan and steamer bags of broccoli.

This is 560 calories, 47g protein, 72g carbs, 9g fat (broccoli not included). This recipe made 7 days worth of meal prep for only $2.25 per meal. Very lazy and cheap! The vegan cheese sauce is pure veggies!
