Chickpea Chicken-less Salad:
1 small carrot – finely diced
1 celery stalk – finely diced
1/4 red bell pepper – finely diced
1 can chickpeas, drained and rinsed – finely minced or mashed (leave some texture)
1/2 tsp onion powder (or use some fresh onion)
1/8-1/4 tsp poultry seasoning
Your favorite mayonnaise (low fat option: use hummus) – desired amount to create the “glue” to hold your salad together
Freshly ground pepper
Salt to taste
